Party Time
Sliders
Can be for a crowd, a quick meal, camping. Lots of uses.


BBQ Beef and Cheese
Ingredients:
1 dozen Hawaiian dinner rolls
2 lbs roast beef (can use deli roast beef, sliced thin)
1 c BBQ sauce
½ c Worcestershire sauce
8 slices cheese of choice
½ c butter
2 T brown sugar
1 T Dijon mustard
1 T Worcestershire sauce
1 ½ t poppy seeds

Instructions:
Cook meat, BBQ sauce and Worcestershire sauce in One Pot, crock pot or on stove until able to pull beef apart with fork.
Add more bbq sauce if needed.
Cut Hawaiian diner rolls lengthwise in half.
Remove top layer of the rolls.
Spread meat across bottom of rolls
Layer cheese over meat.
Replace top of rolls.
Melt butter with brown sugar, mustard, Worcestershire sauce and poppy seeds.
Spread mixture over rolls.
Bake 350 F for 20-30 minutes or until tops are brown and crispy.
Slice into twelve individual sandwiches.
Serve immediately.

Cheeseburger Sliders
Ingredients

2 lbs ground beef
3 T Worcestershire sauce
1 t garlic powder
1 chopped onion
½ t salt, pepper
1 dozen Hawaiian rolls
2 T mustard
8 slices cheese of choice
Pickles of choice, optional
2 T butter, melted
½ t garlic powder, sesame seeds

Instructions
In large bowl mix meat, Worcestershire sauce, garlic powder, onion, salt and pepper.
Press mixture in a lightly greased 9x13 baking dish.
Bake 15-20 minutes, or until “done” to medium.
Drain any fat.
Slice entire pack of buns in half lengthwise.
Place on baking dish or cookie sheet.
Spread mustard across buns.
Transfer entire meat “patty” to bottom layer of rolls.
Layer cheese across all meat.
Can top with pickles.
Then return the top layer of the rolls.
Melt butter, sesame seeds, and garlic.
Brush on top of rolls.
Bake 350 15-20 or until cheese melts and tops are golden.
Slice into 12 individual portions.
Serve immediately.

Sloppy Joe Sliders
Ingredients

2 lbs ground beef
1/2 c water
2 T garlic powder
1 onion, chopped
1 c BBQ sauce
1 c ketchup
1 t mustard
3 T Worcestershire sauce
½ t pepper, salt
2 T brown sugar
1 dozen Hawaiian rolls
8 slices of cheese or choice

Instructions
In crock pot or One Pot or simmer on stove, place all ingredients except the last two (rolls and cheese). 
Simmer or slow cook for 4-6 hours. [If you simmer on stove, you may need to add water so it doesn’t stick]
Split rolls in half lengthwise. Remove tops of rolls.
Spread sloppy joe mixture over bottom of rolls.
Layer cheese over top.
Replace roll tops.
Bake 350 for 15-20 minutes until cheese melts and tops are toasted.

Other variations include:
Ham and Cheese (using lunch meats) with pineapple glaze
Meatball
I've seen almost anything put in sliders for a quick meal, a party pleaser, or to add to camping recipes.

 

In addition to Calico Beans and Green Bean Salad, these make good party additions for those meals for many people.

Dan’s Grilled Chicken
20 lb chicken
Cover with water
1 c soy sauce
1-2 T pepper
1-2 T salt
3 T garlic powder
Boil 45 minutes
Remove chicken.

Marinate:
1 c soy sauce
2/3 c water (I use broth from cooking)
¼ lemon juice
1 t pepper
½ salt
1-2 T garlic powder
Grill on hot grill 1 min each side. While grilling, brush with bbq sauce.
Freezes well.

 


BBQ Meat Balls
3 lb ground beef
2 c quick oats
1 (13 oz) can evaporated milk
1 onion chopped
2 eggs, beaten
2 t chili powder
2 t salt
½ t pepper
½ t garlic powder

Mix. Shape into 1 inch balls. Place in single layer in 9x13 pan.

Topping:
3 c catsup, salsa, BBQ sauce or any tomato pasted sauce
1 1/2 c brown sugar (adjust according to what sauce used above)
3 T liquid smoke
3 T Worcestershire sauce
¾ t garlic powder
Pour over meat balls.
Bake 350’ for 1 hr.
Makes 60 meat balls.
Freezes well.

Cowboy Caviar
½ c oil
½ c vinegar
½ c brown sugar
Heat to boiling. Boil 1 minute. Cool.

(All bean quantities based on 16 oz size can)
1 can pinto beans, rinsed and drained
1 can black beans, rinsed and drained
1 can small white beans, rinsed and drained
1 can garbanzo beans, rinsed and drained
1 can corn, rinsed and drained
(Can substitute beans: i.e. black-eyed peas, white shoepeg corn)
1 each of green, yellow, red pepper, diced (I use what I have)
1 onion, diced
Mix.
Combine vinegar mixture with bean mixture.
Can also add avocado, diced tomatoes, and cucumbers.
Marinate overnight.
Drain 2-3 hours before serving. (KEY TO SUCCESS.)

Serve with tortilla chips.
Can freeze bean mixture and then proceed with marinate process.
