Need Cookies Fast?

Try cake mix cookies.
Here’s some recipes for making cookies in an hour, without a mess.
(Some require additional time for refrigeration, read instructions before trying.)

Lemon Cookies
1 lemon cake mix
8 oz cream cheese
½ c butter
1 egg
1 t vanilla
½ c powdered sugar

Glaze (good without glaze too)
2 T butter
2 c powdered sugar
2-3 T milk
½ t vanilla

Preheat over 350.
Soften and combine cream cheese and butter.
Mix cake mix, egg and vanilla into butter and cream cheese mixture.
(Dough will be sticky and thick.)
Shape into tablespoon sized balls.
Roll in powdered sugar.
Place on lightly greased cookie sheet.
Bake 9-10 minutes (until cookies are puffed and cracked but soft.)
Cool before glazing.

Melt 2 T butter.
Remove from heat, add powdered sugar, vanilla and 2 T milk (if piping glaze)
or 3 T milk (if dunking cookies for glazing entire top of cookie).

Freezes well.

Butter Cookies
1 box butter cake mix
1 egg
1 stick butter, softened
1 t almond flavoring
8 oz cream cheese, softened
Powdered sugar

Mix cake mix, egg, almond flavoring, cream cheese and butter.
Cover dough. Refrigerate overnight.

Preheat oven 325.
Roll dough into 1 inch balls.
Coat with powdered sugar.
Use parchment lined cookie sheet.
Bake 10 minutes. 
Tops will look under-cooked, bottoms will be golden brown.
Cool before serving.

Notes: refrigeration is necessary to work with dough.
Stores well in air-tight container for three days.
Freezes well.

Chocolate Crinkle Cake Mix Cookies
1 box chocolate cake mix
1/3 c oil
2 eggs
1 t vanilla
¼ powdered sugar

Mix cake mix, oil, eggs, and vanilla until forms a ball.
Cover and refrigerate 20 minutes (makes dough easier to form).
Form dough into 1 inch balls.
Roll in powdered sugar.
Bake 350 for 9-11 minutes or until set.
Cool completely before storing.
Freezes well.
