Zucchini Recipes

Zucchini Pie
4 c sliced zucchini
1 c diced onions
½ c butter
½ c parsley (yes ½ c) but have made without any
½ t salt
1 T garlic powder, basil, oregano
1 T mustard powder (or can use prepared mustard)
3 beaten eggs
2 c shredded cheese
Pie Crust.

Cook zucchini, onion and butter till tender (10 minutes)
Stir in seasonings
Blend eggs, cheese. Add to vegetables
Pour in prepared pie crust.
Bake 375 18-20 min or until knife comes out clean

Mexican Squash
Layer sliced zucchini over bottom of 9x13 pan.
Spoon diced green chilies over layered zucchini.
Mix 1 c sour cream with ½ c milk. Pour/spread over layers.
Add more sliced zucchini.
Cover with cheese.
Bake 350 until tender. 20-30 minutes.

Cheesy Zucchini
Saute sliced zucchini
Sprinkle with salt.
When veg are tender, cover with cheese.
Cover pan. Allow to sit. Cheese will melt.

Stir Fry Zucchini (USING CUP-A-SOUP Noodles)
(This takes minimal time, doesn’t heat up the kitchen in the summer)
Use any garden vegetables, onions, peppers, squash, tomatoes (I overfill the pan, they will shrink with cooking)
Cook till tender.
In the meantime, prepare cup-a-soup. (I use 1 cup-a-soup for 2 people)
Drain cup-a-soup broth. (I cut noodles so we can eat then without having them stick out of our mouths.)
Add noodles to vegetables.
Add leftover meat, cut in bite-sized pieces. (Any kind: chicken, beef, pork. Even lunch meat would work.)
Mix to warm meat.

Zucchini Bread
Here’s the link for my recipe.
In the summer, as I harvest, I blend them with a bit of water. Strain it. And Freeze it into quart size bags.
Ready for baking in the winter, when I want my oven heating the house.

Squash Boats
Use large squash.
Scrape out seeds to form hollow.
Fill with meat and spaghetti sauce.
Top with cheese.
Wrap in aluminum foil.
Bake 350 for 25-30 minutes or until squash is soft.

BBQ Squash
Slice in spear shapes (long ways)
Coat with oil and seasonings (pepper, salt, garlic, hickory salt, whatever you have)
Place on grill until soft.

Can add to kabobs with other veg and meat, but great by themselves.

Squash Pickles.
Use any canning recipe for pickles.
Instead of using cucumbers, use squash.
Pickles aren't crisp like cucumbers, but my family loves them.

Then there's omelets, muffins, substituting it in place of oil in cakes, cookies and pancakes...endless opportunities
