Christmas Recipes

Sweet bread recipes given below are:

Banana Bread
Cranberry Nut Bread
Glazed Lemon Bread
Pistachio Bread
Poppy Seed Bread
Zucchini Bread 

Banana Bread

½ c chopped nuts
2 eggs
1 c sugar
1 t Mapleine flavoring*, or vanilla
1 t baking soda
2 c flour
½ c butter
2 T milk
¾ c mashed bananas

Cream butter, sugar, and Mapleine flavoring.
Add eggs. Beat well.
Add remaining ingredients.
Grease and flour pans well.
Fill loaf pans ½ full. (I use small loaf pans.)
Bake 325 — 75 minutes. (Takes less time for smaller pans.)
*Mapleine flavoring can be found with vanilla flavoring in the baking section. 

Cranberry-Nut Bread
1 c sugar
½ t baking soda
½ t salt
1 ½ t baking powder
2 c flour
2 T shortening
1 egg, beaten
1 c cranberries, cut in half
Grated rind and juice of 1 orange plus orange juice as needed to make ¾ c (I’ve substituted apple juice or lemon juice, 1/4 c + water)
Nuts

Sift dry ingredients.
In a separate bowl, beat shortening, eggs, and juice.
Add dry ingredients.
Fold in cranberries and nuts.
Grease and flour loaf pans.
Bake at 350 for 1 hour.

Glazed Lemon Bread
1 ½ c flour
1 c sugar
1 t baking powder
½ t salt
2 eggs
½ c milk
½ c oil
1 ½ t grated lemon peel
Mix together liquid ingredients.
Fold in dry ingredients just until mixed.
Grease and flour loaf pans.
Bake 350 for 40-45 minutes
Immediately when removed from oven, poke with skewer all the way to bottom of loaf.
Drizzle Lemon Glaze slowly over top. Let cool in pan 15 minutes.
Remove from pan. Cool completely.
Makes 1 large loaf, or 2 small loaves.

Lemon Glaze
In small pan, combine:
4 ½ T lemon juice
1/3 c sugar
Heat, stir until sugar is dissolved.

Pistachio Bread
1 box butter recipe cake mix
1 box instant pistachio pudding
1 c sour cream
4 eggs
¼ c oil
¼ c water
Mix all ingredients together.


Topping:
1 T molasses
6 T sugar (can substitute brown sugar for sugar and molasses)
Chopped nuts
2 t cinnamon 

Grease two bread pans (I use 4 small loaf pans).
Fill pans with ½ of batter. Sprinkle with topping. Add remaining batter.
Bake at 350 for 45 minutes (Smaller loaf pans take less time.)
Remove from pans. Cool and wrap.

Poppy Seed Bread

1 box yellow cake mix
1 box instant vanilla pudding
¼ c poppy seeds
½ c oil
1 c hot water
4 eggs, beaten

Blend all but eggs with mixer.
Add eggs.
Grease and flour loaf pans (I use 4 small loaf pans).
Bake at 350 for 35 minutes (takes less time with smaller loaves).

Zuccinni Bread

3 beaten eggs
1 c oil
2 c sugar
2 t vanilla
2 t Mapleine flavoring*
2 c peeled zuccinni (I use frozen shredded zuccinni, drained)
1 c chocolate chips (very necessary)
½ c chopped nuts (if desired)

Mix together.
3 c flour
1 t baking soda
¼ t baking powder
1 t salt
1 T cinnamon
Mix and combine with first set of ingredients.
Grease and flour loaf pans (I use small 4 small loaf pans).
Bake at 350 for 1 hour 10 min. Smaller loaf pans take less time.
Remove from pans. Cool and wrap.
*Mapleine flavoring can be found with vanilla in the baking section of grocery store.
